Tender and Juicy Pork Loin Roast Recipe

Preheat the Oven
Preheat oven to 375°F (190°C). Line a rimmed baking sheet with foil or parchment paper. Pat pork loin dry with paper towels.

Prepare the Spice Rub
In a small bowl, combine paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper.

Season the Pork
Lightly coat the pork with cooking spray. Rub the spice mixture all over the pork.

Sear the Pork
Heat 1 tbsp olive oil in a skillet over medium heat. Sear pork loin on all sides, 3–5 minutes per side, until golden brown. Transfer to the prepared baking sheet, fat side up.

Make the Honey Garlic Glaze
In a bowl, whisk together garlic, honey, soy sauce, mustard, and olive oil. If too thick, add a little more oil or soy sauce. Reserve 2 tbsp of the glaze for the vegetables.

Glaze and Roast the Pork
Brush glaze over the pork. Roast for 25 minutes.

Prepare the Vegetables
Toss Brussels sprouts and butternut squash with 1 tbsp olive oil and the reserved glaze.

Add Vegetables to the Tray
Remove pork from oven and arrange vegetables around it. Tent pork loosely with foil. Continue roasting for 25–30 minutes, or until the pork reaches an internal temperature of 145°F (63°C). Stir vegetables halfway through cooking.

Rest and Serve
Remove pork from oven. Loosely cover with foil and let rest for 10 minutes before slicing. Serve with roasted vegetables.
