Strawberry Cheesecake Pound Cake
Instructions:
1. Prep & Preheat
Preheat oven to 325°F (165°C).
Grease and flour a 10-12 cup Bundt pan or two loaf pans.
2. Make the Cheesecake Filling
In a bowl, beat cream cheese until smooth.
Add sugar, egg, and vanilla, mixing until creamy. Set aside.
3. Make the Pound Cake Batter
In a large bowl, cream butter and sugar until light and fluffy (~4 mins).
Add eggs one at a time, mixing well after each.
In another bowl, whisk flour, baking powder, and salt.
Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with flour.
Stir in vanilla extract and fold in diced strawberries.
4. Layer & Swirl
Pour half of the pound cake batter into the pan.
Spoon cheesecake filling over the batter, avoiding the edges.
Top with the remaining batter.
Use a knife to gently swirl the layers.
5. Bake
Bake for 60-75 mins (or until a toothpick comes out clean).
Cool in the pan for 15 mins, then invert onto a wire rack.
6. Glaze (Optional)
Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
