Soothing Carrot Soup

Ingredients

6–8 fresh carrots, peeled and chopped

1 medium onion, chopped

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

4 cups vegetable or chicken broth

1–2 tbsp olive oil

Salt and pepper, to taste

Optional: fresh herbs (parsley or thyme) for garnish
