Preparation:
For 50 cookies
First, sift the flour onto a baking board, along with the powdered sugar and vanilla sugar. Add the butter (cut into cubes) and the egg yolks. Quickly knead everything into a dough, then chill.
Next, roll out the dough. For the bottoms, cut out round cookies. For the tops, cut out the same number of rounds but with a large hole in the center – making matching rings. Place them on a baking sheet lined with parchment paper and bake with top/bottom heat at 170 °C (338 °F) until light in color (about 8 minutes; watch the rings carefully!).
Once cooled, spread the bottoms with jam, place the tops on, and lightly dust with sugar.
