Layered Potato and Meat Bake with Spinach and Herbs

Ingredients
Potato base

4 large potatoes, peeled and grated

2 eggs

2 tbsp flour

Oil for frying/greasing

Meat layer

250 g minced meat (beef, pork, chicken, or mix)

1 onion, finely chopped

2 cloves garlic, minced

1 fresh tomato, diced

1 tbsp tomato paste

1 tsp paprika

1 tsp Provencal herbs

Salt and pepper, to taste

Greens & topping

1 egg

A handful of spinach leaves

2 spring onions, chopped

A small bunch of dill, chopped

120 g grated cheese (mozzarella, cheddar, etc.)

Directions
Prepare potato base
Mix grated potatoes with 2 eggs, flour, salt, and pepper. Spread into a greased baking dish to form the bottom layer.

Cook meat
In a skillet, sauté onion and garlic until soft. Add minced meat, cook until browned. Stir in tomato, tomato paste, paprika, herbs, salt, and pepper.

Assemble layers
Spread meat mixture over potato base. Add spinach, spring onions, and dill on top. Beat the remaining egg and drizzle over. Sprinkle with grated cheese.

Bake
Bake at 375°F (190°C) for about 45 minutes, until golden and set.

Serve
Let rest 5–10 minutes before slicing.
