Instructions:

1-Sear the Ribs: Season ribs with salt and pepper. Sear in olive oil until browned on all sides, then set aside.

2-Build the Sauce: Sauté onion until soft. Add garlic and tomato paste, cook 1 minute. Stir in red wine, simmer 5 minutes.

3-Braise: Add beef broth, Worcestershire sauce, thyme, bay leaf, and pearl onions. Return ribs to the pot and braise, covered, at 325°F (163°C) for 2.5–3 hours. Thicken with flour, if desired.

4-Make Garlic Mash: Boil potatoes and garlic in salted water until tender. Drain, mash with butter, milk/cream, and salt.

5-Serve: Plate mashed potatoes, top with short ribs, sauce, and onions. Garnish with fresh thyme
