For this secret trick to keep your potatoes fresh for a very long time, you’ll need a garden or a raised bed. To make them last “forever,” potatoes should be stored in what’s called a “root clamp” (Erdmiete). The root clamp is an ancient form of food preservation, used since prehistoric times, and is especially good for storing root and cabbage vegetables.
To do this, a storage pit is dug and lined with chicken wire to protect the vegetables from mice. Then a wooden box containing the potatoes or other vegetables is placed inside, and the whole thing is covered with a layer of straw at least 10–20 cm thick. This creates the perfect climate to keep your potatoes almost indefinitely.
